ESTES PARK, Colo. - Californer -- The Estes Park Resort is excited to announce the opening of Ember Restaurant & Bar on May 26, 2024 at 4:00 p.m. Ember is the fifth restaurant by owner and Certified Executive Chef, Sean Gafner. Under the esteemed Gafner Hospitality Group (GHG), Ember continues the tradition of excellence set forth by its predecessors.
Known for its spectacular and unique lakefront views of Lake Estes and the Rocky Mountains, The Estes Park Resort is committed to providing top notch service and experience driven hospitality. The resort has recently undergone substantial enhancements, including an ongoing $5 million renovation of its guestrooms and public areas. Including a complete renovation of restaurant and ballroom, where the design concept focuses on rich, natural materials working in harmony to enhance the stunning views. The dining room features many layers of seating, for both intimate or large gatherings. Centered around a large grouping of trees and greenery flanked by large custom round booths, each table has a unique vantage point. Another favorite addition, is the locally crafted wood bar that runs the length of the lounge windows, providing the absolute best place for happy hour. Comfortable, yet refined, the new restaurant space sets the tone for an approachable, upscale dining experience featuring a menu of seasonal and locally sourced ingredients.

"After careful consideration of various hospitality groups, we chose Gafner Hospitality Group due to their exceptional skill set, experience, and shared values," shares Patrick Sullivan, Principle of Estes Park Resort. Ember will feature signature dishes that reflect the mountain setting of Estes Park. The menu pays homage to the flavors of the region including elk tenderloin with lingonberry demi-glace, chanterelles, Cambozola potatoes and brussels sprouts. Other options will include Hokkaido scallops with red pepper coulis and shaved black truffle and mouthwatering burgers made with grass-fed beef. For patrons familiar with the GHG restaurants, Ember will also serve popular squash tacos and ahi poke wontons.
As the on-site restaurant and bar for The Estes Park Resort, Ember will serve breakfast, lunch and dinner as well as provide room service seven days a week, beginning on May 26th. With their extensive and impressive catering record, they will be up leveling the resorts event services. With many different venues both indoor and out, the resort and Ember can accommodate groups from intimate gatherings to over 250+ guests. The newly remodeled ball room features herringbone flooring and over 350 square feet of dazzling 80" iron and crystal chandeliers above; paired with floor to ceiling log framed views of Lake Estes beyond make this a dream wedding destination. The Estes Park Resort and Gafner Group envisions Ember as a stunning destination offering exceptional dining experiences – ideal for romantic date nights or a relaxed lakeside visit.
